Taco Meat Leftovers, Ideas by Readers!
Using leftovers can be a challenge. Serving them the same way can often be a bore. Earlier this week I made tacos for dinner, feeding my husband, father in law, 4 ½ year old & myself. The 2 pounds of ground beef proved to be much more than we needed.
Does that ever happen to you? Maybe it is an intentional extra vat of ground beef, chicken or shrimp that you make in hopes of using a portion for a future meal. Other times it’s more of a whoops, where you really overestimated the tummy sizes of your dinner guests!
How to Use Leftover Taco Meat
One of our favorite ways to use leftover taco meat is to enjoy it with a baked potato bar. It’s a perfect protein to add atop of a baked white or sweet potato. In a separate post, Baked Potato Bar for Dinner, I share the specifics on how to make one for the family.

…I like to take ground meat, I don’t see why it couldn’t have taco seasoning, and add in some ground up veggies. I just put some carrots, green beans, squash, whatever in a food processor and cook it quickly with the meat. Then, I use spring roll wrappers that have taken a bath in some hot water, and roll a small amount of the meat and veggie mix in the wrappers like I would a burrito. I lightly coat the “spring rolls,” and I use the term loosely, with oil and bake in the oven until the wrappers are crunchy.
Great ideas, thanks! I love things that make me use everything up. I hate feeling wasteful, but sometimes things get put in tupperware and if I don’t have a plan for it right away , it sits in the back of the fridge for way too long. I’m going to try these!
