A Recipe of Canned Corn & Canned Peaches

One of my favorite dishes to make around the holidays, particularly Thanksgiving, is a Corn Casserole. I received the recipe from my aunt at my bridal shower and have always treasured it because it is THAT GOOD and THAT SIMPLE. Go here to see the recipe. Peachy Corn Muffin

With the continued obsession of my 6 year old with all things corn, I recently tried another “corn” recipe – Peachy Corn Muffin Bites. Big Hit!  The Peachy Corn Bites will served on New Year’s Day.  They are sweet and savory, and best of all, easy to make. I love recipes that make good use of staples – like a can of corn – of our pantry.  I also love that they are kid friendly to make. Nothing to chop or slice, so kids can be part of the cooking! Visit the Libby’s website for the Peachy Corn Bites recipe.

Whether it’s Christmas Eve or Christmas, New Year’s Eve and New Year’s Day or any other holiday, GOOD SIMPLE recipes are important to have on hand.  This one is a keeper!
