With the continued obsession of my 6 year old with all things corn, I recently tried another “corn” recipe – Peachy Corn Muffin Bites. Big Hit!  The Peachy Corn Bites will served on New Year’s Day.  They are sweet and savory, and best of all, easy to make. I love recipes that make good use of staples – like a can of corn – of our pantry.  I also love that they are kid friendly to make. Nothing to chop or slice, so kids can be part of the cooking!
