A bowl of fresh tomatoes, basil from the garden and a box of pasta and you have most of the ingredients for a perfect pasta salad. Make a Caprese pasta salad, a salad served cold, for backyard barbecues or other get togethers.

Big Fat Juice Tomatoes at Winn-Dixie

Tis the season to toss in the tomatoes in your dishes. Yes, many of us attempt to grow these big red fruits (some call them veggies) in the backyard. We do but they aren’t ready to be harvested just yet.

During a recent visit to our local Winn-Dixie a big display of tomatoes caught my eye. Then I read that it was their annual Big Fat Juicy Tomato Event! There were loads of tomatoes of different sizes and colors – all on sale at discounted prices. I knew instantly what I could make for the get-together we would be heading to later that night.

Making Caprese Pasta Salad for Friends

I offered to bring pasta salad since I thought it would compliment the chicken and sausage the host was preparing. Our backyard herb garden is doing great so I knew I had some sprigs of basil ready to be picked.  I picked up a box of pasta and a pack of fresh mozzarella and headed home.caprese pasta salad

I created a Caprese Pasta Salad in little time and brought it over for everyone to enjoy. It was a hit!

Caprese Pasta Salad Recipe

Ingredients

  • 1 box of pasta
  • 1/2 cup of chopped fresh basil
  • 1/2 cup of balsamic vinegar
  • 1 pint of chopped grape tomatoes
  • 1 tablespoon of olive oil
  • 1 teaspoon of sea salt or Kosher salt
  • Freshly ground pepper to taste

Instructions

  1. Cook pasta al dente according the package's directions.
  2. Drain pasta and place back in pot.
  3. Add olive oil and mix.
  4. Allow pasta to fully cool.
  5. Transfer pasta to serving bowl.
  6. Add remaining ingredients.
  7. Toss and serve.
