Watermelon is an American summertime treat! Chomping down on a bite of a juicy slice of watermelon on a hot summer afternoon is so utterly refreshing! Kids and adults love it!
Kicking the watermelon up a notch, is something I successfully did recently. Using ingredients I love, but wouldn’t have thought to combine – mint, cheese and melon – I created a salad that is perfect for summertime. I got the original idea from the new show The Chew.
1/2 watermelon chopped
1 container of crumbled feta (I’ve used reduced fat and it tasted great!)
2 tablespoon balsamic vinegar
1 1/2 tablespoon olive oil
1/2 cup of chopped fresh mint
Mix ingredients and enjoy!
Taking a delicious fruit like the watermelon to the next level isn’t always so easy. Don’t be afraid to add fruit to your favorite recipes. As simple as grilling the fruit on kabobs or sliced like pineapple, you can add fruit as a side dish to your barbecue meals.

Here’s the thing…. all of those ingredients I like but I’m not sure about them together. I would be willing to try it but I don’t know about making it myself until I knew for sure that I liked it!
Yum!! Never had a combination like this but worth trying out for sure!!
