Smart Food: Weekly Menu, Jan. 24 – 28

Below is the dinner menu at this Smart Mama home this week.  I typically do this each Sunday night, but last night I was a bit distracted with the football games.  I have found pre planning each week’s dinner menu saves me time throughout the week.  I hit the grocery on Mondays to purchase the items that I need to complete the dishes.  I also let my husband and daughter pick two of the night dishes.  This week my husband asked for hamburgers & macaroni & cheese (not together) for my daughter.

Week of January 24, 2011

Monday: Hamburgers with caramelized onions, corn and Mashed Maple Squash (I’m using delicata squash)

Tuesday
Sour Cream Chicken Enchiladas

This is a friend’s recipe that is super simple.  I actually made it last week and had so much leftover that I froze half of it!  I’ll serve a salad on the side.

Recipe:

1 lb. cooked chicken…it can be breast, thigh, whatever you have on hand.  Great use of a rotisserie.
2 cups of shredded cheese, I used mozzarella and cheddar
1 small onion diced
1/4 cup of butter
1/4 cup of flour
2 cups of chicken broth
1 cup of sour cream
1 can of diced green chilies
1 jalapeno, diced – optional
PAM cooking spray
12 flour tortillas

Preheat oven to 425.

Sour Cream Sauce: At a low heat, melt butter in a small sauce pan.  Slowly add flour, stirring frequently.  Add chicken broth and continue to stir until thick & bubbly.  Remove from heat and add sour cream and chilies.  Set aside.

Making enchiladas: Spray PAM on a 9×13 dish.  One tortilla at a time, place spoonfulls of chicken on the tortilla.  Sprinkle with onions and cheese, to desired amount.  Add jalapeno if you wan that extra kick.  You can even just do some with jalapeno and some without depending our family preference.  Pour about a tablespoon of sauce on top of cheese & onions.  Fold up the enchilada and place seam side down on baking dish.  After you have all 12 enchiladas placed on the dish, pour remaining sauce on top of all the enchiladas and sprinkle remaining cheese.  Bake in preheated oven for 20-25 minutes.

Ravioli with homemade garlic bread

Although the idea of making homemade ravioli seems exciting for me, this week’s crazy schedule won’t allow.  I’m off to the refrigerated area of Publix in search of yummy pre-made cheese ravioli.

Friday
Homemade Macaroni & Cheese

Again, another SkinnyTaste.com recipe!  My daughter wants Man ‘n Cheese, which I also love, but I’ve found a recipe that may not stick to my thighs as quickly!
