Sausage, Potatoes and Peppers Recipe

Sausage Potatoes and Peppers Recipe

My future chef, or I should say kid chef, and I were at Whole Foods earlier this week when we spotted a chicken sausage with peppers and asiago cheese. I do not remember the brand but this recipe would work with any flavored sausage that your family enjoys. 

Sausage is a perfect protein to keep on hand for busy weeks. There are healthier sausages and ones that are clearly not too healthy. Buy one that fits your nutritional goals. When they are on sale, buy extra and freeze them.

Pepper & Onions

Our girls LOVE peppers and onions. Those are two vegetables that they will eat – obviously the onions not raw – any night of the week. I roast them. I sauté them. I dice them and add to all sorts of dishes. With that in mind, I try to always have some on hand.

Potatoes of Every Color

We all grew up with the traditional big white Idaho potato. They were baked or mashed in my home growing up. Our Cuban culture had us frequently eating Yucca and Malanga – two root-based vegetables that have similarities to potatoes. 

My family loves potatoes. But not just the traditional ones. We buy red, purple, and fingerling.  We roast them, smash them and at times mash them.

Combining Flavors

My daughter and I thought to put together these treasured ingredients – sausage, potatoes, peppers and onions. Every last bit was eaten and it has already been requested to be put on a the menu another day this month.
