Gingerbread Pancakes Recipe
Hot Gingerbread Pancakes right off the griddle is a great way to start a winter morning. We much prefer homemade cakes to the boxed versions, therefore, I try to keep the ingredients on hand for those weekend or holiday mornings when we are hungry for a homemade meal. Since Dad and his girls will work on them together as I get beds made and pour my first cup of tea, I know that the house will smell well and tummies will be well-fed in no time with this recipe.
This gingerbread pancakes recipe is especially perfect for the winter months, and especially Christmas! Can you already smell them in your home? The sweetness from the sugar and the spice from the ginger will have your stomach begging for a bite. Yummy!
Making Gingerbread Pancakes

To make the Gingerbread Pancakes, first place a frying pan or skillet over medium heat and add a tablespoon of oil or butter to the pan.
Using a large bowl, whisk together all dry ingredients.
In a separate bowl, mix eggs, milk, molasses, and butter.
Slowly add wet ingredients to dry ingredients and stir until combined.
Next, using a 1/4 cup measure, portion out the batter into your pan – about 2-3 pancakes at a time – and flip when the tops begins to bubble and the underside has turned a caramel-brown color, about 2 minutes.
Cook for 2 more minutes on the other side and then remove to a warm plate as you repeat with the rest of the batter.
Serve with powdered sugar or maple syrup. Enjoy!
