I made this loaf on a whim. My girls love grapes. I think it might even be there favorite fruit! I had currants that remained from my Irish Soda Bread recipe from March so I thought those would add an extra sweetness. This recipe was adapted from Green Black Red, Recipes for Cooking and Enjoying California Grapes. 

It’s a fantastic cookbook filled with all sorts of clever ways of using grapes in recipes. I made a few. Today I’m sharing their “Grape and Cranberry Tea Bread” with my tweaks.

This recipe makes 2 bread loaves. They freeze very well so be sure to store one in the freezer to enjoy later!
Ingredients
  • 2 1/2 cups All-Purpose Flour
  • 3/4 cups sugar
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1/4 cup vegetable oil
  • 1 cup sour cream (I used lowfat.)
  • 1/4 milk (I used 1%)
  • 1 egg, beaten
  • 2 teaspoons of grated lemon zest
  • 1/2 cup grapes, halved – looks best with red or black
  • 1/2 cup currants
  • 1/2 cup walnuts, chopped
Instructions
  1. Preheat oven to 350 degrees.
  2. Spray 2 loaf pans with cooking spray.
  3. In a large bowl, combine the flour, sugar, baking powder, and salt.
  4. Add the wet ingredients – oil, sour cream, milk, egg and lemon zest.
  5. Stir gradually.
  6. Fold in the grapes, currants and walnuts.
  7. Our the batter into the two pans. Bake for 40-45 minutes. Check with a toothpick in the center to be sure it is cooked.
  8. Cool for 5 minutes, then turn over pans and allow to cool completely on a cooling rack.
