Pumpkin Whoopie Pie Recipe
15-ounce can of pumpkin puree
pumpkin pie spice
of soften cream cheese
of vanilla extract
of confectioners sugar
Making & Baking the Cookies
Preheat oven to 350.
In large bowl, beat eggs, brown sugar, oil and vanilla extract with an electric mixer until smooth.
Using a spoon, stir in the pumpkin.
In a medium bowl, combine the flour, pumpkin spice, baking powder, baking soda and salt.
Scoop 1/2 cup at a time the flour mixture into the egg mixture. Use the electric mixer to blend ingredients until smooth.
Onto an ungreased cookie sheet, scoop tablespoons of the batter.Keep 1-2 inches between each dollop.
Use a wet finger to flatten and round the dollops
Bake for 12 minutes. Transfer to wire rack. Allow to completely cool.
Making Traditional Cream Cheese Frosting
In large bowl beat with mixer the cream cheese, butter, and vanilla extract.
Slowly add confectioners sugar.

Add pumpkin spice to the pie with this
Assembling the Whoopie Pies
On the bottom side on one cookie, spread a generous amount of frosting. Top with another cookie.
