Pumpkin Whoopie Pie Recipe

  • 2 eggs
  • 2 cups brown sugar
  • 1 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 15-ounce can of pumpkin puree
  • 3 cups white flour
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt


  • 6 ounces of soften cream cheese
  • 1/2 cup of butter softened
  • 3 teaspoons of vanilla extract
  • 4 cups of confectioners sugar


Making & Baking the Cookies

  • Preheat oven to 350.
  • In large bowl, beat eggs, brown sugar, oil and vanilla extract with an electric mixer until smooth.
  • Using a spoon, stir in the pumpkin.
  • In a medium bowl, combine the flour, pumpkin spice, baking powder, baking soda and salt.
  • Scoop 1/2 cup at a time the flour mixture into the egg mixture. Use the electric mixer to blend ingredients until smooth.
  • Onto an ungreased cookie sheet, scoop tablespoons of the batter.Keep 1-2 inches between each dollop.
  • Use a wet finger to flatten and round the dollops
  • Bake for 12 minutes. Transfer to wire rack. Allow to completely cool.

Making Traditional Cream Cheese Frosting

  • In large bowl beat with mixer the cream cheese, butter, and vanilla extract.
  • Slowly add confectioners sugar.

Making Pumpkin Spice Frosting

  • Add pumpkin spice to the pie with this recipe.

Assembling the Whoopie Pies

  • On the bottom side on one cookie, spread a generous amount of frosting. Top with another cookie.
