Tonight’s dinner is a family favorite. Chicken and rice. But, tonight I’m kicking it up a notch in flavor and health! I have marinaded the thinly cut chicken breast in an oil-based marinade, using Soybean Oil!

Mediterranean Soy Marinaded Chicken

Recipe Type: Marinade

Use this marinade to add flavor and more to chicken, fish or tofu!
Ingredients
  • 1/2 cup Soybean Oil
  • 2 minced garlic cloves
  • 1/4 tsp fresh ground black pepper
  • 6 springs of fresh rosemary, cut 2-inches long
  • 1/2 cup red wine vinegar
  • 2 tbsp honey
  • 1/4 tsp sea salt
Instructions
  1. Put all ingredients in a food processor.
  2. Pulse for 30 seconds.
  3. Pour on top of protein (chicken, fish or tofu) and let the marinade soak.
  4. Cook protein to your liking.

  1. i tried soy recently. I love the Soy Berry Pancakes, but i had a hard time with the blueberries in the batter. I would reccommend just putting them (by hand) in the pan, before the first flip.here is the recipe:

    1 1/2 cup White whole-wheat flour
    1/2 cup Oatmeal, quick cooking
    2 tablespoons Baking powder
    1 1/2 cup Vanilla or plain soymilk
    4 Eggs
    2 tablespoons Brown sugar, packed
    2 tablespoons Soybean oil (often labeled “vegetable oil”)
    4 cups Fresh blueberries, divided
    Maple syrup (optional)

  2. This looks delicious! I have a house of picky eaters, and the moment I mention anything with soy they run the other way. But I’m going to try this recipe (and not tell them what’s in it), I think it will be a huge hit with them!
