Smart Food: Slow-Cooked Chicken Wine and Tomato

Another great slow-cooker YUMMY recipe for back to school days!  I adapted this recipe from EatingWell.com.  It tastes great with a serving of brown rice and salad.  My daughter, the picky eater, LOVED it.  The chicken comes out moist, which is a challenge for many of us when making chicken.  Leftovers taste great, too.  I served a thigh and the sauce on top of salad greens and it was great.

Lawhorn’s Signature Seasoning
This family owned and operated business (lawhorns.net) has put together a delicious seasoning blend perfect for chicken, steak, pork, seafood and pretty much anything else that would appreciate a great bold flavor!  Believe me, we tried it!
I began with 4 chicken legs placed in a 9×13 glass dish.  I sprinkled the seasoning liberally over each piece.

I even pulled the skin back to get the seasoning really “in there.”
I baked it in the oven at 425 for about 50 minutes. The aroma in the house as it baked made us drool!  The cooked chicken looked, smelled and tasted fantastic!  It had the right amount of kick to it!

Straight out of Martha Stewart’s Great Food Fast is this recipe for cashew chicken. I am still a stir-fry novice; I’ve made some with flank steak a few times but needed to branch out and try some chicken. I love cashew chicken when I eat Chinese out – it’s one of my favorite dishes.   This was incredibly easy and fast to pull together and it tasted really good. Smart Food: Chicken with Apricots

Here’s a recipe that’s fairly easy and healthy! I have included nutritional information below.
Chicken with Apricots ~ Serves 4

Pecan halves, 2 oz
2 teaspoons of margarine
3 ripe apricots, quartered and pitted
1 tablespoon of extra virgin olive oil
4, 4 oz chicken breast halves
Salt & freshly ground pepper
1 teaspoon of freshly ground ginger
1 scallion, white & green parts, thinly sliced (separated)
½ teaspoon of grated lime zest
1 teaspoon of cracked red pepper
½ cup of chicken broth (or dry white wine)
2 tablespoons of maple syrup

Preheat oven to 350.  Place the pecans in a cookie sheet and bake for 10 minutes.  Let cool.  Crumble the pecans with hands or masher.
In a large skillet melt margarine on medium high heat.  Add the apricot.  Sauté the fruit for 5 minutes to soften and lightly brown.  Stir the apricots frequently. Remove fruit from pan and set aside on plate.
Add oil to pan.  Lightly salt and pepper the chicken.  Place …

Out of the graveyard – the George Foreman!!!!

Look what was unearthed tonight? The ridiculously large and PAIN to clean George Foreman Grill! I know you have one too. Who doesn’t? This isn’t my first. I originally owned, during my bachlorette days the more standard size. But the moment I was let loose with the bridal registry gun in hand I was certain to include the “FAMILY” size George Foreman Grill. Yes, we did use it, maybe a dozen times during the 1st 6 months or so. The annoyance of cleaning it is what tucked it away to gather dust for years now. Well, with the desire for grilled chicken and severe thunderstorm warning in effect, I grabbed the tot-lock to open that cabinet that holds the George Foreman!
