Smart Food: Pot Roast, a Back to School Favorite

As we get ready for the crazy back to school schedule, we need to stack our decks.  We need to have plans in place to increase our chance of success.  The slow cooker is a busy Smart Mama’s friend!  It can be the sous chef that we have always longed for.  Dedicating often less than 15 minutes, a Smart Mama can get dinner organized during nap time, while kids are in school or even before they wake up!

The slow cooker cooks dinner throughout the day, giving you time to do the other millions of things on your to-do list!  As we begin this school year, I hope to share meals that are both easy and yummy, perfectly inline with a Smart Mama’s needs and appetites!


Earlier this week I put together a pot roast that left the family drooling for more!  I knew that I needed to share it with you!

Smart Mama Pot Roast

  • 3 lbs boneless roast
  • 2 large onions, sliced
  •  1/2 cup brown sugar
  • 1/3 cup soy sauce
  • 1/3 cup cider vinegar
  • 2 bay leaves
  • 3 garlic cloves, minced
  • 1 tsp. freshly grated ginger
  • 1 cup sliced carrots
  • 2 cups of sliced mushrooms
  • 2-3 cups of fresh spinach or 2, 10 oz packs frozen
  • 2 tbsp. cornstarch
  1. Place meat in cooker. Layer with onions.
  2. In a bowl, stir together sugar, soy sauce and vinegar. Pour over meat.slow cooker pot roastPouring mixture over meat.
  3. Add bay leaves, garlic & ginger.
  4. Cover and cook on LOW for 4-5 hours.
  5. Add carrots, mushrooms and spinach.
  6. Cover and cook for an additional 30 minutes.
  7. Use ladle to remove 1/2 of broth.  In a small bowl, slowly and cornstarch to broth and whisk.  Return mixture to cooker.pot roast
  8. Cook an additional 10 minutes.

Serve the roast over rice or noodles.

This dish freezes well and tastes even better the next day!
